Over the course of the hotel’s 19-month restoration, our Food & Beverage team journeyed across Japan in search of exceptional ingredients worthy of the new Girandole by Alain Ducasse. For one special evening, the producers we met along the way will join us to share the stories, philosophy, and craftsmanship behind their work.
The menu presents an elegant progression of seasonal vegetables, carefully raised duck, and pristine seafood, each course celebrating the remarkable character of these thoughtfully selected ingredients.
A pairing of fine wines has been selected to accompany the experience.

・Sea scallops from Hokkaidō, fennel and citrus
・Vegetables from Tokorozawa cooked with black truffle
・Seared hata from Kochi, smoked aubergines and tsurumurasaki, cooking jus
