Park Hyatt Tokyo will close its doors for a property-wide renewal starting from May 7, 2024, and reopen in autumn 2025.

The refined walnut interior entices guests to explore the collection of luxurious cakes,
pastries and jams made exclusively by our Pastry Chef and his team.

EXECUTIVE PASTRY CHEF

Julien Perrinet

A native of Brittany, France, Chef Julien Perrinet dreamed of becoming a pastry chef from a very young age. After graduating culinary school with honors, he began an international career that took him to Canada, Qatar, and then the Maldives before becoming the Head Pastry and Bakery Chef at a luxury hotel in Beijing, China. He continued to work with some of the world's best chefs and international talent as he moved to Singapore, where his culinary pursuits included working at Joël ROBUCHON & L'Atelier de Joël ROBUCHON and TWG Tea Company. He joined Park Hyatt Tokyo in December 2020 after serving as Executive Pastry Chef at Grand Hyatt Taipei. Chef Julien’s personality is reflected in his creations as well as his appreciation for Japan’s natural beauty and four distinct seasons. A broad range of international experience, naturally inquisitive nature and unique creative style make his leadership a valuable asset to our Pastry Kitchen at Park Hyatt Tokyo.
