CHEF PROFILE

Pascal Cialdella

Born in France, Chef Cialdella began his career at the young age of 13, and became an apprentice in a patisserie shop in France for Chef Jean Jung, MOF finalist in 1987. He continued to expand his craft at many pastry shops and hotels in Europe, he then went on to become Pastry Lecturer at the coveted Le Cordon Bleu in London. Chef Cialdella was Executive Pasty Chef at Grand Hyatt Incheon since 2009 prior to being appointed Executive Pastry Chef at Park Hyatt Tokyo in July 2015. “I look forward to creating classic French confections showcasing the high quality seasonal products of Japan,” says Chef Cialdella.

CHEF PROFILE

Makoto Onozawa

While many patissiers learn their trade at culinary school, Makoto Onozawa received a more hands-on introduction when he exchanged his trading company job for the pastry kitchen of the Prince Hotel. Though he was appointed to his present job in June 2014, this is the second time Chef Onozawa has worked at Park Hyatt Tokyo, having previously spent eight years with the hotel prior to joining a wedding company.As sous chef and patissier at the Pastry Boutique, he takes faith in old-fashioned pleasures, crafting cakes that are both disarmingly simple and intensely satisfying.
