New Chef de Cuisine of Girandole,
Manabu Ichizuku
Warm greetings from Park Hyatt Tokyo.
I am Manabu Ichizuka and from this May, I started working as the Chef de Cuisine of Girandole. I am honored to be part of the Park Hyatt Tokyo family and look forward to serving you my cuisine.
I was born in Ishikawa Prefecture in 1965. My culinary career started after graduating from cooking school in Kanazawa and my first job was working at a hotel in Toyama. I ended up moving to Tokyo to be Chef de Cuisine of French Kitchen at Grand Hyatt Tokyo and at the main dining restaurant of Palace Hotel, Crown before my position here at Park Hyatt Tokyo.
Before moving to Tokyo I trained at Michelin-accredited Le Grand Véfour in Paris, L’Auberge Bretonne in La Roche-Bernard and La Pyramid in Lyon. I learned a lot about French cuisine and technique during this time. I was also awarded with the title of Maîtres Cuisiniers de France “Jean Schillinger” at the French Food Culture Center (FFCC) and came in 2nd place for the 66th Prix Prosper Montagné World Cuisine Contest in France.
My culinary background ranges from casual to fine dining and I have constantly strived to integrate my originality in my cooking.
