Chef Paul’s Commitment to Sustainability

Greetings from Park Hyatt Tokyo! My name is Paul Gajewski and I am the Chef de Cuisine at New York Grill.

I began my career at Vue de monde in Melbourne, diving headfirst into the world of luxury dining. This served as a strong foundation upon which I built my career. The next few years, I staged at world famous restaurants such as Noma, in Copenhagen, and Guy Savoy and L’Atelier in Paris.

Finally settling in Singapore, I began working at Tippling Club, where, at the age of 26, I was appointed Head Chef. By 2016, I returned to Melbourne to work as Head Chef at Tommy Collins, and eventually I opened my own restaurant consulting company. In late 2019, I made the move to Tokyo, where for the past year I have been leading the kitchen at New York Grill.

Coming up to my first-year anniversary at Park Hyatt Tokyo has been truly an incredible journey into a world-renowned luxury hotel. Every day I feel truly inspired by the team, who has never stopped giving our guests the service and attention they deserve, despite any challenges we faced this year — that is vital to us. We work with the best ingredients Japan has to offer and we love to share them with our guests.

Sustainability is one of our main focuses at Park Hyatt Tokyo; to preserve and sustain what we have now for as long as possible so people in the future can enjoy what we have. With the buffet at New York Grill consisting mainly of sustainably sourced dishes, we really take into consideration how we use each ingredient, where it comes from and the impact it has on the planet. Personally, it is a cause that I feel that I can get behind, as I feel very motivated and passionate to play my part in preserving the environment.

As time goes on, my goal is to showcase New York Grill and guide the restaurant — as well as the team — to new heights. We have the most beautiful, iconic restaurant and I strive to give the guests an experience they deserve. Luxury is personal and we work hard to give each and every guest that experience in the Park Hyatt Tokyo way.
