From early March, a composed hot pot brings together Kyoto bamboo shoots and fresh vegetables with charcoal-grilled free-range chicken, layered with subtle depth. Ikejime wild yellowtail from Owase or Suruga Bay opens the experience with remarkable clarity and precision. In April, sakura shrimp lend delicate color, joined by grilled tilefish accompanied by fragrant turnip broth. Kamado-cooked rice, prepared with quiet discipline, allows the integrity of each ingredient to speak.
