Cuisine
Brasserie elegance and everyday comfort are combined for a modern interpretation of classic Parisian and brasserie dishes, focusing on healthy cooking techniques. In the mornings, a unique gourmet breakfast, including Japanese set menu can be enjoyed.

Kojiro Tsutsumi, Chef de Cuisine
Born in Tokyo, Chef Tsutsumi graduated from Musashino Culinary Institute. After graduating he moved to Paris and worked at the Michelin one-star La Table d`Anvers and the Michelin two-star Michel Rostang as Chef de partie. He joined Park Hyatt Tokyo in 2007 and was appointed Chef de Cuisine in 2019. In spring 2025, Chef Tsutsumi spent seven-weeks at Paris-based Ducasse Paris restaurants for an in-depth familiarization, adding to his thirty-years of culinary experience in Japan and France.
