Inspired by the elegance of Park Hyatt Tokyo's floral arrangements, Executive Pastry Chef Julien Perrinet adorned these elegant mousse cakes with different types of flowers, both chocolate and edible. A classic heart shape with a soft pink glaze, a combination of three textures and three flavors give this cake a unique depth: a fromage blanc vanilla mousse offers a light and creamy sensation, while strawberry and rose jam bring a fruity and refreshing touch to the cake, which is further enhanced by a raspberry-peach cremeux. Finally a pecan dacquoise and streusel give the cake a nutty and crispy texture.

Park Hyatt Tokyo’s Valentine’s Day Chocolates are not complete without an offering that reflects the traditional taste of our location. A caramel center complimented by the gentle taste of the matcha ganache, while a sesame ganache is paired with a sharp, citrusy yuzu center. A bright red raspberry truffle filled with tangy raspberry center ads a bit of festive contrast to this set, which boasts a unique blend of flavors created with Japanese tradition in mind.

Choose from three different flavors of this classic heart-shaped treat. Strawberry Valrhona chocolate is paired with red currant ganache in one variety, while a pink raspberry and cherry chocolate heart continues this fruity pattern. Chocolate Bar Collection

Unbound by strict convention, this selection offers an array of choice. White chocolate topped with dried raspberries and strawberries makes our Berry Shortcake Bar, while our Passion Fruit and Coconut Bar is adorned with dried mango and shredded coconut. The Cookies and Cream Bar sees a marriage of vanilla white chocolate and dark chocolate sable cookies. Our Praline and Orange pairs rich dark chocolate with caramelized nuts and orange peel, whereas our Apple Pie Bar warms you up with a cinnamon milk chocolate, topped with dried apple and crepe. Finally, our Matcha Sesame Bar give a Japanese twist with matcha white chocolate topped with lightly roasted black and white sesame seeds.
