Sustainable Seabass to Table
Girandole introduces a seasonal dinner with a course of premium seabass. Caught locally in Tokyo Bay, the seabass is quickly pretreated by a special culinary method called “Shunjime” which retains the seabass’s freshness. Start your meal with a tartare appetizer that beautifully contrasts the vivid pink of beetroot and fish, followed by a gazpacho with a fresh summer vegetable. Your meal is crowned complete with a choice of a grilled or a papillote wrapped with herbs seabass, cooked perfectly by Chef Kojiro Tsutsumi.
