Brewed in winter stored away throughout the warmer months until it is matured in the fall, this unique sake was chosen for how well it is suited to Japanese cuisine during this time of year. Starting on September 9th and coinciding with “Choyo”, an ancient festival in Japan, Chef Nobuhiro Yoshida humbly presents an elegant menu using carefully-selected, traditional Japanese ingredients to compliment this Hiyaoroshi’s seasonality.
