Tokachi Royal Mangalica Pork
New York Grill will feature rare Mangalica pork as a special menu item for a limited period this autumn.
Native to Hungary and considered to be a national treasure, it was successfully bred in Tokachi, Hokkaido – a similar latitude to Hungary. The breed takes about one year to rear and the pork is then matured. Considered a delicacy by top chefs around the world, Mangalica pork is very rich in creamy, white fat that can melt at 10 degrees lower than standard pork. The fat infiltrates the meat when cooking, creating an intense, sweet and deep flavour.
