JOUER – Gold medal winning cake at 2016 Japan Cake Show Tokyo

Greetings from Park Hyatt Tokyo! I am Takashi Nagasawa from Pastry Kitchen.

I hope that you all have had the chance to taste JOUER, my original dessert at Pastry Boutique. I am honored that it won the gold medal in the grand gateau category at the 2016 Japan Cake Show Tokyo.

The Japan Cake Show Tokyo takes place every year in October, where pâtisseries from all over the country gather to compete with one another by showcasing their original dessert creations.

The concept that I had when I first created this dessert was to use Earl Grey as the main ingredient and flavors that would complement it. The flavors that ended up being added with the Earl Gray were caramel, chocolate, passion fruit and mint. It took a lot of effort and time to bring out all of these flavors so that they were distinct yet when combined, resulted in an overall balanced taste. After a series of trials and errors, I am very proud to have achieved a gold medal for my creation.

After the Japan Cake Show Tokyo, Pastry Boutique has been selling my winning item and I am overwhelmed with happiness from the positive feedback I have received from the customers.

JOURE is available at Pastry Boutique until the end of December (excluding the time period from 22-25 December) and I welcome those who have not tasted it to come and try it.
